How to make Potato Skin Bites ?

Potato skin bites take the spotlight as the ultimate game day appetizer. They not only fit well within your budget, but are also effortlessly assembled and adorned with the finest toppings—bacon, cheese, and sour cream. However, when hosting a large gathering, dealing with full-sized skins can be a bit challenging. Introducing: potato skin bites. We’ve downsized the classic appetizer by transforming coin-sized potato slices into crispy bites, ready to be embellished with all your preferred loaded toppings. Whether you seek a more convenient version of the loaded app or aim to satisfy a Super Bowl-sized crowd, these bites are the perfect solution.

Similar to our traditional potato skins recipe, we opt for Russet potatoes in this version. However, instead of hollowing out baked potatoes, we slice our Russets into ½” coins, primed for seasoning and baking. These potato rounds are coated in a simple mix of cayenne pepper, garlic powder, salt, and pepper. While we recommend keeping the seasonings straightforward, feel free to enhance the flavor with your personal favorites.

Once seasoned and baked, your bites are ready to be adorned with the finest toppings. For a classic touch, we chose shredded cheddar, bacon, sour cream, and green onions. However, let your creativity flow! Buffalo chicken with blue cheese crumbles is a timeless game day pairing, while chili and cheese add an extra hearty dimension to this appetizer.

Ingredients
3 Russet potatoes, scrubbed clean
2 tbsp. olive oil
Kosher salt
Freshly ground black pepper
Pinch cayenne pepper
1 tsp. garlic powder
1 1/2 c. shredded cheddar
6 slices bacon, cooked and crumbled
Sour cream, for serving
3 green onions, thinly sliced

Directions

Step 1:
Preheat the oven to 400°. Cut the potatoes into 1/2″ slices.

Step 2:
In a spacious bowl, coat the potato rounds with olive oil. Season them evenly with salt, pepper, cayenne, and garlic powder, ensuring a thorough toss. Arrange the seasoned rounds in a single layer on a spacious baking sheet. Bake for 30 to 40 minutes, flipping halfway through, until they achieve a light brown color and tenderness.

Step 3:
Add cheese and bacon on top of each potato round. Broil for approximately 2 minutes or until the cheese becomes melty.

Step 4:
Place dollops of sour cream on each potato and garnish with green onions.
